Walking through the fields and coming home hungry, eating the summer and drawing its flavours, Adriana Glaviano gives us a handbook of suggestions to open the window and having lunch on the terrace again, to enjoy some summer wellness before the autumn cuddling. Prepare fresh tomato soups, cheese sandwich, use the grill, roast peppers, take sprigs of mint and sage. Collect the last figs and portrait them on a pizza, a bruschetta or a sheet (if there’s some of them left, use them to make a jam: it’s perfect with Parmesan cheese)

Here are some simple and warm recipes, whose secret ingredients are love and serenity you use to prepare them.
Adrianna is a talented photographer who loves cooking. This is the second part of the dishes she prepared and photographed in the south of Spain a few weeks ago.

Bacon, egg and cheese sandwich

How to do

1. Fry a coupe pieces of bacon in a pan on low heat until they are crispy.
2. Crack two eggs and whisk them, then put them into a small frying pan, after a couple minutes the eggs should harden and become like an omelette.
3. Flip the egg over in the pan, and cut thin slices of any kind of cheese (I like cheddar), and put it on top of the egg until it melts.
4. Toast two pieces of bread and put everything together to make a sandwich.

Watermelon, rucola, feta & mint salad

How to do

1. Cut watermelon into small cubes.
2. Add rucola and mix it together.
3. Crumble feta into the salad.
4. Cut mint into small pieces and mix everything together.

Tomato Soup & Grilled Cheese with Sundried Tomatoes

How to do

Tomato soup
1. Heat butter in a saucepan on low heat.
2. Cut onion and celery into small pieces and add them to the pan, cooking them until they are soft.
3. Add flour into the vegetables and mix it well, then add milk, salt, pepper and sugar.
4. Bring the mixture to a boil.
5. Cut tomatoes into small pieces and put them in a pan on low heat.
6. When the tomatoes begin to soften add them to the vegetable mixture.
7. Keep the heat on and keep stirring everything together.
Grilled Cheese & Sun Dried Tomato Sandwiches:
1. Preheat a frying pan on low heat for a minute or two.
2. Put a piece of buttered bread in the pan, then add thin slices of cheddar cheese on top of it.
3. When the cheese starts to melt put sun dried tomatoes on top of the cheese and add another buttered piece of bread.
4. Flip the sandwich over until the bread is crispy and the cheese is melted.

Sandwich with roasted peppers and mozzarella

How to do

You can buy already roasted peppers in the market, or you can make your own :
1. Take some large red peppers and cover them with a bit of oil, put them in the oven on a baking sheet at 200 degrees celsius.
2. Wait about one hour or until the peppers have collapsed.
3. Take them out and de-seed them, peel them and cut them into strips.
4. Put them into a bowl with slices of garlic, then cover them in olive oil.
5. Leave them in the fridge to marinate for about 24 hours.
6. Cut a piece of ciabatta bread and put the peppers and slices of mozzarella inside.

Spinach & Ricotta ravioli with butter and sage

How to do

1. Boil some handmade ricotta ravioli in a pot for 3 to 4 minutes.
2. While the water is boiling, melt butter in a pan on low heat and add nutmeg and sage, let it simmer for a couple of minutes.
3. Serve the ravioli onto a plate and drip the butter and sage sauce over the pasta.
4. Grate Parmigiano over the pasta.

Arroz a la Cubana

How to do

1. Boil rice and put a large portion onto a plate.
2. Fry two eggs and then place them onto the rice.
3. Empty a couple of pork or beef sausages and cook the meat in a pan, then add the meat on top of the rice & eggs.
4. The add a sauce if you want, I put tomato sauce on mine and then mixed it all together.
