This year in Italy we’re celebrating the Artusi’s centenary. Artusi is the first and most famous italian gastronomist the one who collect all the historical recipe of italian legacy. Here’s our report of Artusiana the annual event that celebrate Pellegrino Artusi.

In this large middle ground lies the ‘ Artusiana , a big fair dedicated to Pellegrino Artusi , author of Science in the Kitchen and the Art of Eating Well The first book that picked up that the traditional Italian recipes.
The Artusi spent years collecting recipes from family, scribbled pieces of paper, testimonies and stories, all to pass on the goodness of home cooking, and every year at Artusiana – held in his hometown, Forlimpopoli in Romagna – there is a festival that presents the culinary excellence of the area with food stalls, restaurants, workshops and conferences. Not the usual festival, but an event prepared year by a year in advance to offer new ideas, insights and delicious taste of real home cooking.
Along the year the activity continues with the promulgation of the the Artusi House , which organizes workshops and initiatives such as The Way Artusiana , a route between Romagna and Florence, foster City of Artusi, to exploit this strip of land full of flavor.
Here’s a recipes taken from his volume the number 31.

31. MINESTRA DI DUE COLORI

Ingredients

- Flour, 180 grams.
- Butter, 60 grams.
- Parmesan cheese, 40 grams.
- Milk, 4 ounces.
- Eggs, two whole and two reds.
- Salt, to taste.
- Dash of nutmeg.
- A handful of spinach.

Preparation

Boil the spinach, squeeze the water well and pass through a sieve. Put the butter is melted when the fire and toss in the flour, mixing well, then pour the hot milk little by little, add salt and knead with a wooden spoon while cooking to make a smooth paste.
Remove it and when lukewarm add the eggs , Parmesan and nutmeg. Then divide this mixture into two equal parts, one of which called spinach mix in sufficient quantity to bring it to the green color and no more.
Put the mixture into the syringe with the mold in round holes and push into the boiling broth as “passatelli” No 48, but this should do it in twice, first with the mixture and after with the yellow green.
This dose will be enough for eight or ten people.
