Cherries in vodka

In these days cherries are being celebrated and last weekend’s Vignola Cherry Festival has been succesful, so we want to celebrate its blaze of flavonoids as well by preparing the traditional conserve of Emilia grandmothers, in order to convey the feeling of preservation and tasting in time and in the calm that is necessary in summer.

When it’s the time for cherries
We go harvest cherries
We go harvest them with a basket

Cherries in vodka

Ingredients

1kg large firm ripe cherries
300 gr sugar
1 lt vodka

How to do

Wash and dry the cherries, cut the stem with scissorss, to a cm from the fruit.
Put them in a hermetically sealed jar. Add the sugar.
Pour the vodka in only when the sugar has melted to half its weight. It is important to shake the jar from time to time to help the syrup’s formation.
Will be special in winter, served on fruit salad or on a cake.
